What glorious weather we are having, though I hear through the grape vine that it's not going to last sadly. But whilst we bask in the sunshine I have the perfect salad to have. I actually tend to have it all year. But when I first came up with this salad, I imagined sitting out in the sun on a balcony or by the pool in the French Riviera with a crisp cold glass of White.
I love this salad because its healthy, tasty, filling and you can add lots of difference things to change it up.

All you need is: Green beans, peppers, bacon and pesto.
Cook the bacon nice and crispy I find under the grill gets the best result plus healthier. Then fry or griddle some peppers and boil some beans (enough for the base of the salad). Once it is all cooked put it all together part from the crispiest bits of bacon, add about 2 tsp of pesto can add more if you fancy, 2 is perfect for me. Then once all has been mix together put it onto a plate and add the crispiest bits of bacon on top. There it is healthy, colourful and tasty salad.
I have on other occasions added spinach, asparagus, salmon instead of bacon, chicken also.
Enjoy - if the sun goes away, just imagine sitting out front of a chic restaurant in Cannes, sun shinning, big hat and sunglasses on, glass of wine (me would be champagne) in one hand and thinking your the modern day Audrey Hepburn, whilst watching the ever so chic french women walk by.
